Infinity Restaurant: A Commanding, Infinite View

It often goes unnoticed by visitors when they cross from the Dutch to the French side of the island; the same applies when moving from the Caribbean Sea to the Atlantic Ocean side.

Although the Atlantic is an ocean and the Caribbean is a sea, the many bays and inlets mean that the beaches are equally gorgeous and the waters equally suitable for swimming on both sides, with only a few exceptions, such as Guana Bay. The views on either side seem truly infinite.

However, that is not the only reason Infinity carries its name. The restaurant features an infinity pool located directly on the edge of its terrace. Those who choose to enjoy the commanding view over the Atlantic from either side of the terrace will see more than they might expect.

Besides the ever-present, detailed view of St. Barths, you also have an “infinite” view of an important nursery area for humpback whales (Megaptera novaeangliae). From January to April, bring your binoculars and you may catch a glimpse of mothers (and later, calves) making their way from the Northeastern Caribbean to these relatively warm waters to give birth.

Cuisine & Signature Dishes to Try

The Infinity menu consists of a mix of Caribbean specialties and international dishes. Grilled meats and seafood are served alongside pastas, burgers, and other familiar favorites.

Its weekly highlight, featured annually on the national events calendar, is the Sunday Brunch, with chef-attended stations offering pasta, omelets, pancakes, and crêpes.

Neighborhood Context: Oyster Bay

Oyster Bay embodies the dual-nation character of St. Maarten / St. Martin like no other place, as the border runs through both the bay and the village.

From Infinity, it is theoretically only a three-minute swim to French waters (although it is better to do so from the adjacent Oyster Bay Beach). Next to Infinity’s parent resort, Oyster Bay Beach Resort, you will find Coral Beach Club, JW Marriott St. Maarten and Princess Heights resorts just minutes away on the Dutch side of the bay.

On the French side, where the area is literally translated as Étang des Huîtres, you will find a marina, shops, and restaurants. The border of the bay was adjusted in 2023, as uncertainty about the exact demarcation had remained since 1648. As a result, the marina area became part of the French side.

Why It’s Worth Visiting

  • There is no other unobstructed Atlantic view on St. Maarten quite like the one from Infinity, with the exception of the charming silhouette of St. Barths approximately 25 km offshore.
  • The island’s dual-nation character truly comes alive here, as France is only about 100 meters away. Most of the bay and St. Barths are also part of France, meaning the Oyster Bay peninsula where Infinity is located can be considered a small outpost of the Kingdom of the Netherlands in the Caribbean.

Practical Visitor Information

 

Parking & Accessibility

Parking at Infinity is easy, as visitors can use the Oyster Bay Beach Resort parking lots. Simply inform the guard that you are visiting the restaurant. This part of the island is not connected by buses but a 15 minute cab ride from Philipsburg only.

Dress Code

Oyster Bay Beach Resort is designed as a holiday destination, so the dress code is relatively liberal. This applies especially when dining outdoors. For an indoor dining experience, it is appreciated that swimwear is covered.

You will find both visitors and island residents dressing casually as well as dressing up for an evening at Infinity.

Reservations

The surrounding resorts are among the largest on the island, so making a reservation is recommended in almost any situation. This is especially true during the winter and spring months, when the island tends to be busier.

Best Time to Visit

Although Infinity is open throughout the day, it is best known for its lunches and evening dinners, when you can often see the lights of St. Barths glowing in the distance.

However, if you are an early riser, this side of the island — and Infinity in particular, thanks to its unobstructed views — is considered one of the best locations to watch the sunrise.

Fun Facts

  • The hill visible on the left side of the terrace is Babit Point. Although it appears to be within walking distance and part of the resort, this hill is across a small channel, French territory and therefore part of the European Union, while where you are standing is an autonomous country within the Kingdom of the Netherlands in the Caribbean.
  • If you are hoping to spot whales in spring, the best viewing window from shore is usually early morning on calm, clear days.

It offers international‑cuisine dining with indoor and outdoor seating, ocean‑view terraces and poolside service, serving breakfast, lunch and dinner daily from 07:30 AM to 10:00 PM, with its adjoining bar open from 09:00 AM to midnight. The setting features oceanfront and resort‑pool views, making it a suitable choice for casual meals, romantic dinners or relaxed resort‑side dining.
