When you open the menu and order your first beverage, the feeling of an oriental journey only grows stronger. The original cocktails seem to take inspiration from different corners of the Far East: “Papa Raya” sounds Malaysian, “Lady Yang” Chinese, and “Last Samurai” — this one without doubt — Japanese. The same Asian influence can be found among the beer selections, including Asahi for those who enjoy Asian lagers.

The drinks are only the beginning. Chow’s signature dishes include General Tso Tofu, General Tso Chicken, and General Tso Shrimp — interpretations of the iconic sweet-and-spicy deep-fried dish rooted in Taiwanese-American Chinese cuisine.

But the rest of the menu makes clear that Chinese cuisine is not the only inspiration behind this Asian fusion destination. Mongolian, Japanese, and Korean cuisines all contribute influences, while Chicken Satay introduces a touch of Indonesia. Crab Rangoon, meanwhile, reflects the broader history of Chinese-American cuisine rather than originating directly from Myanmar. This is only a snapshot of the fusion of flavors at play here.

• There is no other restaurant on the island offering General Tso-inspired cuisine like Chow, nor are many Asian variations available elsewhere.

Parking is available in the surrounding Maho area, although spaces can become limited during busy evenings. The restaurant is located in a lively pedestrian-friendly area and is easily accessible from nearby resorts.

Although Chow is located close to two of the Caribbean’s most iconic beaches, the Maho Strip is a nightlife destination where visitors and locals alike come for dining and entertainment.
If you plan to continue your evening afterward, dressing as you would for a night out in a major city will help you feel comfortable and appropriately dressed. That said, Chow maintains a welcoming atmosphere and will accommodate guests in a variety of styles.

During the busy winter months, reservations are highly recommended. Chow is available through OpenTable if you wish to book ahead, although walk-ins are also welcome.

• The General Tso signature dishes are named after Zuo Zongtang (also known as Tso Tsung-t’ang), a 19th-century military leader from China’s Hunan province. However, the general never ate the dish. It was created in the 1950s by chef Peng Chang-kuei, who later became associated with its development in Taiwan and the dish’s connection to Hunan culinary traditions.
• You do not necessarily have to enjoy your Chow dishes at Chow itself. Cocktail Bar Oasis next door offers tables where guests can order food from both Chow and its Italian sister restaurant, Roma. It is a convenient option for groups with different culinary preferences.
